Nose:

Delightful aromas of vanilla pod and honeycomb fresh from the hive rise from the glass first. These are followed by further aromas of lemon curd, freshly cut coconut flesh and fresh, vibrant tropical fruits. A background suggestion of soft, gentle peat smoke underpins everything. Hints of cocoa powder and white peach, plus the scent of spring flower meadow add depth and intrigue.



Taste:

On the palate this whisky initially feels zingy and zesty with bold notes of lemon meringue pie, fresh vanilla pod and candied lime. This gives a refreshing and uplifting sensation that softens with time to reveal further notes of butterscotch, milk chocolate and heather honey. Ripe tropical fruit characteristics, plus fresh apricot and coconut flesh build complexity.

 

Lovely, warming baking spices begin to evolve and add a savoury element to the whisky – think of cinnamon stick, white pepper and clove especially. Much like on the nose, everything is built on a foundation of delicate peat smoke, which seems to whisp and wrap itself around each note. 



Finish:

The finish is long and expressive with a distinct peppery warmth. The sweet and fruity elements fade first – the tropical fruit, butterscotch and honey, then finally the milk chocolate. Then the zesty citrus notes. This leaves the warming spices and drying oak to do battle and draw out the finish for several minutes.

 

The addition of water softens the whisky nicely, allowing the quality of aged spirit and the sympathetic cask maturation to shine - think of vanilla fudge drizzled in fresh honey. It also feels less spicy with more lush tropical fruit and a delightful fresh cut grassy note developing.
